Smokin' Hot Deviled Eggs

Yield: 2 dozen. Prep: 20 min.

  • 12 hard-cooked eggs
  • 1/2 cup mayonnaise
  • 3 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon capers, drained
  • 1 tablespoon stone-ground mustard
  • 1/4 teaspoon salt
  • 1/4 teaspoon white pepper
  • Minced fresh cilantro

Cut eggs in half lengthwise. Remove yolks; set whites aside. In a small bowl, mash yolks. Add the mayonnaise, chipotle peppers, capers, mustard, salt and white pepper; mix well. Stuff or pipe into egg whites. Refrigerate until serving. Sprinkle with cilantro.

Nutrition Facts: 1 stuffed egg half equals 74 calories, 6 g fat (1 g saturated fat), 108 mg cholesterol, 116 mg sodium, 1 g carbohydrate, trace fiber, 3 g protein.

All-American Loaded Burgers

  • 1 cup dry bread crumbs
  • 1/2 cup finely chopped onion
  • 1/2 cup Italian salad dressing
  • 2 eggs, lightly beaten
  • 2 pounds ground beef
  • 6 kaiser rolls, split
  • Leaf lettuce, Colby cheese slices, tomato slices, ketchup, prepared mustard and french-fried onions, optional

In a large bowl, combine the bread crumbs, onion, salad dressing and eggs. Crumble beef over mixture and mix well. Shape into six patties.

Grill burgers, covered, over medium heat or broil 4 in. from heat for 5-7 minutes on each side or until a meat thermometer reads 160° and juices run clear. Serve on rolls with lettuce, cheese, tomato, ketchup, mustard and Fried Onion Rings if desired.

Red, White and Blue Slaw

  • 6 cups angel hair coleslaw mix
  • 12 cherry tomatoes, halved
  • 3/4 cup coleslaw salad dressing
  • 3/4 cup crumbled blue cheese, divided
  • 1/2 cup real bacon bits

In a large bowl, combine the coleslaw mix, tomatoes, salad dressing and 1/2 cup blue cheese. Cover and refrigerate until serving. Just before serving, sprinkle with bacon bits and remaining cheese.

Nutrition Facts: 1 serving (3/4 cup) equals 245 calories, 18 g fat (5 g saturated fat), 34 mg cholesterol, 960 mg sodium, 13 g carbohydrate, 2 g fiber, 8 g protein.

Star-Studded Blueberry Pie

Yield: 8 servings. Prep: 45 min. + cooling

  • 4 cups fresh or frozen blueberries
  • 1 cup sugar
  • 1/4 cup quick-cooking tapioca
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • Pastry for double-crust pie (9 inches)
  • 2 tablespoons butter

In a large bowl, combine the blueberries, sugar, tapioca, lemon juice and salt; toss gently. Let stand for 15 minutes. Line a 9-in. pie plate with bottom pastry; add filling. Dot with butter; flute edges.

Cover edges loosely with foil. Bake at 400° for 25 minutes. Remove foil; bake 20-25 minutes longer or until set. Cool on a wire rack.

From remaining pastry, cut out 15 large stars with a 2-in. cookie cutter and 15 small stars with a 1/2-in. cookie cutter. Place on an ungreased baking sheet. Bake at 350° for 5-10 minutes or until golden brown. Remove to wire racks to cool. Randomly place stars over cooled pie.

Star-Spangled Shortcake

Yield: 6 servings. Prep: 30 min.

  • 1 package (8-1/2 ounces) corn bread/muffin mix
  • 2 cups halved fresh strawberries
  • 2 cups fresh or frozen blueberries, thawed
  • 1/3 cup sugar
  • 5 teaspoons balsamic vinegar
  • Vanilla ice cream

Prepare corn bread batter according to package directions. Fill six greased star-shaped cups or muffin cups two-thirds full. Bake at 350° for 12-15 minutes or until a toothpick inserted near the center comes out clean.

Meanwhile, in a large bowl, combine the strawberries and blueberries; sprinkle with sugar and gently toss to coat.

Cool shortcakes for 10 minutes before carefully removing from pan to a wire rack. Drizzle vinegar over berries; toss to coat. Top each shortcake with a scoop of ice cream and berry mixture.
